250 ml Olive Oil
2 tsp Dijon mustard
15 ml Lemon Juice (Adjust to taste)
1 T Whey (Optional)
Salt, pepper and herbs to taste
Add all ingredients into a jug
With a hand blender, blend all ingredients until the emulsion becomes thick and creamy.
Add to salads, tuna, chicken and boiled eggs, this will assist to increase the fat content of your meals.
Lemon juice is essential to thicken the emulsion, you may adjust to taste, but don’t use less than 10 ml, as the mayonnaise will not thicken without it.
The addition of whey will help your mayonnaise last longer, adds enzymes and increases the nutrient content.
This mayonnaise recipe is so easy, my 10 year old daughter regularly helps in the kitchen by whipping up a batch.
